Preparation of egg and coffee mixture

Crack 2 eggs into a wide bowl and beat with a fork to mix the yolks and whites well. Add ½ tsp. cinnamon and ½ tsp. salt.

Pour in 80 g (½ cup) condensed milk (or a combination: 50 g (4 tbsp.) sugar and 50 ml (3,5 tbsp) milk) and 80 ml coffee.

Stir the ingredients until the mixture becomes homogeneous. It is important that the sugar and salt are completely dissolved.

Roasting toast

Dip the bread in the egg and coffee mixture on both sides. Allow excess liquid to drain so that the bread is not too wet. Transfer the bread to a plate or wire rack.

Melt 50 g (4 tbsp.) unsalted butter in a wide skillet. Place the bread in the pan and fry over a medium heat for 2 to 3 minutes on each side so that the toast browns evenly.

Keep an eye on the frying process to ensure that the toast becomes golden but does not burn. Make sure the oil does not smoke.

Preparing the cream

When the toast is ready, prepare the mascarpone cream.

Mix 100 g (3 ½ oz) of mascarpone cheese with 75 g (6 tbsp.) of powdered sugar. The amount of sugar can be adjusted to your taste.

Add the zest and juice of half a lemon to the mascarpone and powdered sugar mixture. Mix thoroughly.

Serve the toast with the mascarpone cream, garnished with berries or fruit of your choice.

Combine flavors boldly and enjoy your breakfast!
