Tarator, or Lebanese tahini sauce, is the epitome of eastern gastronomic art, combining simplicity of preparation and delicacy of flavor.

⏱ Cooking time — 40 minutes overall + cooling time. Includes 10 minutes of preparation and cooking + 30 minutes unattended.  

🔪 Ingredients

  • 120 g (4 ¼ oz) tahini
  • 3-4 garlic cloves, chopped or crushed
  • 15-30 ml (1-2 tbsp.) fresh lemon juice (to taste, about the juice of half to a whole lemon)
  • 60 ml (4 tbsp.) of water (or as needed for desired consistency)
  • salt to taste
  • a few sprigs of parsley (optional)

Ingredient Preparation. Mixing the main ingredients

Finely chop the garlic. Also, for a smoother texture and a spicier garlic flavor, you can grate it finely or use a garlic grinder.

If using parsley – also chop it finely.

Mix the tahini and chopped garlic together.

Tarator

Adding liquids and seasonings

Add the juice of half a lemon and stir.

Now pour in the water little by little and stir to get a sauce-like consistency, salt.

Taste for salt/lemon, add more if needed. You can also add more water if the consistency of the sauce seems too thick.

Final addition and cooling

Add the parsley (if using) and stir.

Put the sauce in the refrigerator for 30 minutes before serving to allow the flavors to combine better.

  • Chop the garlic (you can grate it for a spicier flavor). If using parsley, chop it finely as well. In a bowl, mix the tahini with the minced garlic.
  • Add the juice of half a lemon, then gradually pour in water until desired consistency. Season with salt and add additional lemon juice or water if needed.
  • Stir in the parsley (if using) and chill the sauce in the refrigerator for at least 30 minutes for the best combination of flavors.
