- 120 g (4 ¼ oz) tahini
- 3-4 garlic cloves, chopped or crushed
- 15-30 ml (1-2 tbsp.) fresh lemon juice (to taste, about the juice of half to a whole lemon)
- 60 ml (4 tbsp.) of water (or as needed for desired consistency)
- salt to taste
- a few sprigs of parsley (optional)

Finely chop the garlic. Also, for a smoother texture and a spicier garlic flavor, you can grate it finely or use a garlic grinder.
If using parsley – also chop it finely.
Mix the tahini and chopped garlic together.
Adding liquids and seasonings
Add the juice of half a lemon and stir.
Now pour in the water little by little and stir to get a sauce-like consistency, salt.
Taste for salt/lemon, add more if needed. You can also add more water if the consistency of the sauce seems too thick.
Final addition and cooling
Add the parsley (if using) and stir.
Put the sauce in the refrigerator for 30 minutes before serving to allow the flavors to combine better.
