You don’t need a meat grinder for these cutlets, and you have all the ingredients on hand.

Using chicken fillet instead of red meat makes these cutlets practically diet-friendly, while still turning out juicy and melt-in-your-mouth.

The recipe is versatile and is perfect for both a casual lunch and a holiday table. In addition, you can use these patties to make burgers.

Chopped chicken cutlets with mozzarella cheese

For 8-10 cutlets:

  • 500 g (1 lb) chicken breast
  • 2 eggs
  • 100 g (3 ½ oz) mozzarella cheese
  • 30 g (2 tbsp.) all-purpose flour
  • 50 g (3 tbsp.) mayonnaise
  • 1 tsp. salt
  • vegetable oil for frying

Fillet slicing

Take 2 chicken fillets (500 g or 1 lb) and cut into thin strips and then into small cubes. Transfer to a deep bowl.

Beat 2 eggs, add 30 g (2 tbsp.) of all-purpose flour and 50 g (3 tbsp.) of mayonnaise. Mix everything well.

Grate 100 g (3 ½ oz) of mozzarella cheese, salt and mix again and set aside.

Frying cutlets

Pour vegetable oil into a heated frying pan.

Spoon the prepared minced meat into the frying pan and fry the cutlets on both sides over medium heat.

Finished juicy cutlets transfer to a dish and serve, garnished with herbs.

Ingredients 

  • 500 g chicken breast

  • 100 g mozzarella cheese

Instructions

  • Cut the chicken fillets first into thin strips and then into small cubes and combine with the eggs, flour and mayonnaise. Add the grated mozzarella, salt and mix thoroughly.
  • Heat a frying pan with vegetable oil. Spread the minced meat with a tablespoon. Over medium heat, fry the cutlets on both sides until golden. Serve ready cutlets decorated with herbs.
