Peel and cut the apples into quarters, removing the core. Then cut each quarter into 4-5 slices.
Melt butter in a wide skillet over medium heat. Add your chosen spices (black and white pepper, cinnamon, cloves). Place apples in a single layer and fry for 3 minutes on each side. Add the sugar and mix well.
Continue cooking, stirring regularly, until caramelized, about 5 minutes. Adjust the heat if necessary.Once desired caramelization is achieved, remove pan from heat.
