This sauce would be good as a dip and as a salad dressing. For example, as an alternative to sour cream or mayonnaise, when you want something richer than sour cream, but also something lighter than mayonnaise.

In terms of consistency and texture, the whipped feta sauce resembles a fatty mayonnaise, or rather an aioli. Because there is quite a strong emphasis on the garlic flavor. But you can make the sauce less spicy and garlicky – simply reduce the amount of garlic to one clove, or eliminate it altogether.

This sauce, like tzatziki, goes great with fresh, baked and grilled vegetables.

🥣 Ingredients

🍽 For 300 grams of sauce:

  • 200 g (7,1 oz) of feta cheese
  • 100 g (3,5 oz) sour cream
  • 3 garlic cloves
  • 1-2 tsp. white wine vinegar (can be replaced with lemon juice)
  • salt
  • black pepper
  • dill (optional)

Equipment:

A food processor or blender, but you can do without them.

 🔪Step by Step Directions

Mix 100 g (3,5 oz) of sour cream and 200 g (7,1 oz) of feta cheese in the bowl of a blender.

Peel 3 cloves of garlic and add to the bowl. Pour in 1 tsp. white wine vinegar or the same amount of lemon juice.

Whisk with a blender until smooth. Season with salt and pepper, whisk again and taste. Add more salt and 1 tsp white wine vinegar if needed if more acidity is desired.

If you do not have a blender or food processor, mash the feta with a fork and grate or finely chop the garlic, mix everything with sour cream and mix well.

Transfer the sauce to a plate to serve.

You can decorate the sauce with finely chopped dill. Or you can not only garnish, but add more and mix it well, it will be a good place here.
