Tarator (Lebanese tahini sauce)

Ingredients:

- 120 g (4 ¼ oz) tahini - 3-4 garlic cloves, chopped or crushed - 15-30 ml (1-2 tbsp.) fresh lemon juice (to taste, about the juice of half to a whole lemon) - 60 ml (4 tbsp.) of water (or as needed for desired consistency) - salt to taste - a few sprigs of parsley (optional)

Chop the garlic (you can grate it for a spicier flavor). If using parsley, chop it finely as well. In a bowl, mix the tahini with the minced garlic.

Step 1.

Add the juice of half a lemon, then gradually pour in water until desired consistency. Season with salt and add additional lemon juice or water if needed.

Step 2.

Stir in the parsley (if using) and chill the sauce in the refrigerator for at least 30 minutes for the best combination of flavors.
