- 2 cooked boneless chicken thighs or breasts (fried or baked) - 1 tbsp. mayonnaise (you can use a 1-to-1 mixture of mayonnaise and sour cream/yogurt or replace mayonnaise with yogurt/sour cream) - 1 tbsp. pesto - 50 g (1 ¾ oz) cheddar cheese - 2 tortillas - lettuce or spinach leaves
Cut chicken into strips, shred lettuce or spinach leaves, grate cheddar cheese.
Spread the tortilla with mayonnaise (or substitute) and pesto. Lay out chicken strips, add lettuce or spinach, sprinkle with grated cheese. Roll the tortilla into an envelope. Repeat with the second tortilla.
