Spicy-sweet strawberry jam, with spicy notes of cinnamon, cloves and cardamom. This jam is the perfect accompaniment to a cheese plate or cheese toast. But I suggest going a little further and serving this jam sauce along with brie baked in bread.

In addition to cheeses, spicy strawberry jam would be appropriate in combinations with poultry and meat. Or as a sauce for burgers and sandwiches.

⏱  Cooking time —30 minutes overall. Includes 10 minutes of preparation and cooking + 20 minutes unattended.

🥣 Ingredients

🍽 For 250-300 grams of jam:

  • 300 g (10,6 oz) strawberries
  • 100 g (3,5 oz) sugar
  • 1 cinnamon stick
  • 1 tsp. chili flakes
  • 2 cardamom pods
  • 2 to 3 clove buds
  • 1 star anise
  • black pepper

Extra:

— tea bag;

 🔪Step by step Directions

Wash the strawberries and remove the tails.

Put 300 g (10,6 oz)of strawberries in a saucepan and pour 100 g (3,5 oz) of sugar, add 1 tsp of chili flakes, stir and set aside for 15 minutes.

Crush 2 boxes of cardamom with the flat side of a knife.

Take a tea bag, open it and pour out the contents. Fold inside the crushed cardamom, 2-3 clove buds and a star anise. Tie with string or staple it.

Put the saucepan on low heat. Wait for the strawberries to juice, add the spice packet and cinnamon stick, and leave on the stove for 10-15 minutes. Stir from time to time.

After 10-15 minutes, remove the saucepan from the heat, take out the spice packet and discard. Pepper with freshly ground black pepper and stir. Pour the jam into a serving bowl or a jar with an airtight lid for storage.

Ingredients 

  • 300 g strawberry
  • 100 g sugar

  • 1 tsp. dry chili flakes
  • 2 pods cardamom
  • 2-3 buds cloves
  • 1 star anise
  • black pepper

Instructions

  • Wash the strawberries and remove the tails. 
    Put the strawberries in a saucepan with the sugar, add the chilli flakes, stir and set aside for 15 minutes.
  • Crush the cardamom with the flat side of a knife.
    Take out the contents of the tea bag, put the crushed cardamom, cloves and badian inside. Tie with string or staple it. 
  • Heat over low heat, when the strawberries are juicing add the spice packet and cinnamon stick. Cook for 10-15 minutes, stirring occasionally.
  • Remove the sauté pan from the heat, take out the spice packet and discard. Pepper with freshly ground black pepper and stir.
    Pour the jam into a serving bowl or jar with an airtight lid for storage.

  1. Hey Alex, thank you for this recipe. Tried making it today and it turned out amazing. Complex flavour, nothing like what I’ve had before. The only thing i added was a bit of lemon juice to brighten everything up, also left in the spices for much longer to extract better flavours. Thanks!5 stars

      Lemon juice is good idea, but for me is enough sourness from strawberries. But of course it’s a matter of taste and left to your discretion 🙂
