Zucchini and zucchini can be used to make anything. Appetizers, salads, soups, side dishes, and even cakes. But this time we are going to make a simple appetizer that even a child can handle. All we need is zucchini, grated parmesan (or its equivalent), a little oil and spices.

The texture and flavor of zucchini sticks are roasted and slightly crispy on the outside and juicy on the inside. But be sure to eat and serve them hot. They will get soggy when they cool and there will be no trace of the crispiness, though it will still be delicious.

Baked zucchini sticks are a great addition to almost any dish to be served as a side dish. Be it meat, fish or poultry. I recommend serving with your favorite sauces, my favorite for vegetable dishes is zazziki.

⏱ Cooking time — 30 minutes overall. Includes 10 minutes of preparation and cooking + 20 minutes unattended.

🍽 For 4 portions:

  • 2 zucchini (you can substitute with zucchini)
  • 30 g (1,1 oz) Parmesan
  • 30 g (1,1 oz) breadcrumbs
  • 1 tsp. oregano
  • 1/2 tsp. sweet paprika
  • 1/2 tsp. thyme
  • 3/4 tsp. salt
  • 1 tbsp. olive oil
  • black pepper (optional, I did not use)

I used a similar mixture for breading the zucchini as in the baked tilapia recipe. You should try it too.

 🔪Step by step Directions

Preheat the oven to 180 °C / 360 °F, top-bottom + convection mode.

Prepare the breading to coat the zucchini.

Take a bowl and add 30 g (1,1 oz) of breadcrumbs, 30 g (1,1 oz) of finely grated Parmesan, 1 tsp. oregano, 1/2 tsp. sweet paprika, 1/2 tsp thyme, 3/4 tsp salt and if you like, you can add some black pepper. Mix all the spices well.

The breading is done.

Wash 2 zucchini. On a kitchen cutting board, cut off the tails on both sides.

Cut the zucchini in half, then cut each piece in half again, but crosswise.

Cut the resulting slices into 2 or 3 pieces lengthwise, depending on the size of the zucchini. If you think the slice is too large, cut it in half again.

I thus cut a couple of pieces, and I was fine with the size of the rest as it was.

Do the same with the second zucchini.

Put all the zucchini slices in a bowl, pour 1 tbs. olive oil. Mix well.

Take a baking tray, cover it with parchment paper, put a rack on top. If you do not have a rack, you can place the zucchini on the paper, but it is better to use a rack, because it will allow the zucchini to bake more evenly, thanks to the circulation of air.

Roll each piece of zucchini in a mixture of Parmesan and breadcrumbs with spices. Then place on a rack.

Tray with parmesan-lined zucchini slices send to bake in a preheated 180°C / 360°F oven on top – bottom + convection. Bake for 15-20 minutes until golden brown. It took me about 17 minutes to bake.

  • Prepare the breading: mix together the parmesan, breadcrumbs, oregano, sweet paprika, thyme, and salt in a bowl. Set aside.
  • Trim the tails off the zucchini and cut each one in half lengthwise. Cut each half across and cut each into slices about the same size, 2-3 pieces from one piece.
  • Place in a separate bowl and drizzle with olive oil. Mix well.
  • Roll each zucchini slice in the breading mixture. Place them on a rack placed on a baking tray lined with parchment paper.
  • Bake the zucchini for 15-20 minutes in a preheated oven until golden brown.
