Cauliflower steaks can be prepared in a variety of ways: grilled, pan-fried and oven-baked. In this recipe, we will coat the steaks in a dried spice sauce with lemon juice and Worcester sauce and bake them in the oven.
I use granulated garlic instead of fresh garlic more often when baking. Fresh garlic (especially finely chopped garlic) will burn and give a bitter taste when baked for a long time. This will not happen with pelleted garlic, and the garlic flavor will be even more intense.
Ingredients
For 1-2 servings:
- 1 cauliflower
- 1/2 lemon juice
- 1/2 lemon peel
- 1 tsp. granulated garlic
- 1 tsp. dried onions
- 1 tsp. smoked paprika
- 30 ml. (2 tbsp.) olive oil
- 5 ml (1 tsp.) Worcester sauce
- salt
- Smoked salt to serve (optional)
Step by step Directions
Preheat the oven to 180°C /350F, top-bottom mode.
Prepare the sauce. Grate the zest of 1/2 lemon into a small saucer, squeeze the juice of 1/2 lemon into it.
Add 1 tsp. each of granulated garlic, smoked paprika and dried onion. Pour in 30 ml (2 tbsp.) olive oil (about 2 tablespoons, you can substitute any other flavorless vegetable oil), 5 ml (1 tsp.) Worcester sauce (about 1 teaspoon) and salt with a pinch of salt. Stir to combine.
Cut off the leaves from the cauliflower and trim the stem so that the cauliflower can be placed horizontally on a board stably.
Cut the cauliflower into steaks.
For perfect flat steaks from the cauliflower you need to cut off about 2-3 cm from each side and divide the central part into 2 steaks exactly in the middle. Accordingly, from one cauliflower head you will have 2 steaks + scraps, which can be used in other dishes. But they won’t work as steaks because they’ll fall apart.
If you’re not steamed up on perfectionism or you’re not going to make other cauliflower dishes and feel bad about throwing them away, make like me. Use the “scraps” in this recipe. Just cut about 1 cm off the sides beforehand to even out their shape.
You will also end up with 2 nice steaks from the center and 2 not so nice, but no less tasty.
Line a baking tray with baking paper, place the cauliflower, salt with a pinch of salt, and brush the sauce on top.
Bake for 35-40 minutes. For the last 5-10 minutes, you can turn on the grill to brown the tops more.
Arrange on plates, drizzle with olive oil, salt with smoked salt (if available) and serve as a side dish or main course.
You can sprinkle the cauliflower steaks with feta or other cheese and your favorite herbs (I used cilantro), chopped nuts or toasted pumpkin seeds are also a great addition.
Baked Cauliflower steaks

- 30 ml olive oil
- 5 ml Worcester sauce

Instructions
- Preheat the oven to 180°C /350F, top-bottom mode.
- Prepare the sauce. Mix the zest and juice of half a lemon, add 1 tsp. each of granulated garlic, smoked paprika and dried onion. Pour in 30 ml olive oil, 5 ml Worcester sauce and salt with a pinch of salt. Stir.
- Slice the cabbage into 3 cm thick steaks. For perfectly shaped steaks, use only the central part, where the florets are reinforced by the stem. To do this, cut 3 cm from each side and divide the central part in half. The sides can also be baked, it will be delicious, but the shape of the steak will most likely not hold and they will fall apart into florets at one stage.
- Line a baking tray with baking paper, place the cauliflower, salt with a pinch of salt, and brush the sauce on top.
- Bake for 35-40 minutes. For the last 5-10 minutes, you can turn on the grill to brown the tops more.
